Sofia B. Olsson has from the beginning been a part of the upstart of restaurant vRå at Clarion Hotel Post in September 2012.
Her background consists of working in several kitchens in Gothenburg and early in her career she worked at Basement in Gothenburg, at the time with a star in the Guide Michelin.
Sofia has competed in Årets kock (Chef of the Year) and has with partnership with vRå been placed as one of the 10th best fish restaurants in Sweden according to White Guide 2013.
Swedish raw material as well as sustainability aspects when it comes to fish and the products that are used is something that is dear to Sofia’s heart. Together with a passion for Japanese flavors and techniques the food turns into a combination that constantly keeps developing and surprising.
At vRå we have chosen to only work with fish and shellfish from the North Atlantic Sea but also inland lakes that we chose wisley depending on the season. This is something we take advantages of daily and in return the dishes can change from day to day.
