The restaurant atmosphere is intimate, cozy and of course inspired by Japan – an exclusive experience within the walls of the big hotel it calls home, which enriches the attraction still. At vRÅ we use both Swedish and Japanese cooking techniques, and sometimes combine them in the same dish. The meeting of the two becomes somewhat exciting as we develop and create something very unique. Raw food and sushi at vRÅ have more in common with contemporary Scandinavian food culture than the strict, traditional Japanese sushi culture. We make the best use of the ingredients and in a variety of ways. We might cold smoke, dry skins and so on. And as you will see in the menu, we prioritize ingredients that are in season. We offer creative concoctions – a meeting between the Swedish and Japanese an overall extraordinary experience: the flavors, choice of beverages and personal service.
